If you have never tried baked humus it’s a treat for sure. The addition of Sorel gives the humus a smoother texture and much moister consistency without having to add to much oil or flavor diluting water.
Blend together in a blender or food processor until smooth:
1 ½ cups cooked chick peas
One bunch sorrel (about 8 to 10 medium sized leaves)
2 cloves of fresh garlic
1 tbl tahini
2 tbl fresh parsley
2 tbl unrefined pure sun flower oil
¼ tsp paprika
salt & pepper to taste
The mixture should blend easily and be a bit thinner than how you would normally serve humus, but not runny, it will firm up a bit once its baked. Bake at 300F for 1 hour or until golden brown and cooked through.
